stats: human readable sizes in the stats.log

Description

For very large values, eg 25769840916, the current byte counters in the stats logs can get hard to read/ make sense of by humans.

Having something like 24GiB instead can be more user-friendly, as at these sizes the byte-level resolution isn't really interesting anyway.

Should be configurable, but probably enable by default. Only for stats.log, not for JSON stats records.
